He was appointed as the foundation Chair in Veterinary Anatomy at University of Sydney in 1966. His research was directed at understanding the basis for improved carcase quality in meat-producing animals, receiving worldwide attention and leading to major advances in the field. Butterfield was the Australian universities' representative on the Australian Meat Research Committee, President of the Australian Equine Research Foundation, and a member of Expert Panels on the selection of stock for meat production. He was active in forging stronger ties between the University and both the veterinary profession and rural industries.
