He later became government analyst and in 1854 he moved to New Caledonia. There Gunst set up a practice in Noumea. After some time he returned to Australia where he ran a practice in Grafton and then in Melbourne. In 1862 he returned to Europe. While in Australia Gunst is known to have written two articles on the production of Sorghum Saccharum.
