She worked for the Torry Research Station, Department of Scientific and Industrial Research, Aberdeen, Scotland 1950-1967. In 1968 she moved to Tasmania to join the CSIRO Division of Food Preservation, Tasmanian Regional Laboratory, being placed in charge of the group which specialised in fish and shellfish in 1969. This group (later renamed the Seafood Technology Section) was led by Olley until her official retirement in 1989 as Senior Principal Research Scientist. She considers her most important work to have been on temperature function integration, bacterial growth rates and rates of deteriorative change in stored foods. The work led to the development of a new approach which has come to be known as Predictive Microbiology.
