<abstract>William James Scott's early work involved working out the conditions of handling, cooling and transport that would enable chilled beef to be successfully exported to Britain. During World War II he was concerned with the microbiology of foods supplied by Australia to the allied Forces in the South West Pacific. After the War he pioneered studies on the water relations of microorganisms. He received a Doctor of Science (DSc) from the University of Melbourne.</abstract>
