He also lectured on the technology of breadmaking at the Sydney Technical College from 1908, being responsible for the establishment of a school of bakery at the College in 1916. His particular research interest was in the physiology of poisons. Chapman was Chairman of the 1919 - 1920 Commission on Miners' Diseases, investigating the prevalence of miners' phthisis and pneumoconiosis in the Broken Hill mines.
